The latitude of the Côte de Nuits doesn't encourage a particularly
early harvest. On the other hand, its perfect aspect gives the area the aptitude to
produce outstanding red wines.
The Nuits -Saint-Georges Appellation wines come from the communes of Nuits -Saint-Georges,
and Premeaux-Prissey.
The soil is essentially chalky clay on a Jurassic formation. |
Classed as an A.O.C. in 1934, the Nuits -Saint-Georges Appellation
covers :
- 165 hectares of A.O.C.(Nuits -Saint-Georges of which 12 ha are in Premeaux-Prissey).
- 140 hectares of A.O.C. Nuits -Saint-Georges Premier Cru (of which 62 ha are in
Premeaux-Prissey).
The average harvest represents :
- 7,052 hectolitres of A.O.C. Nuits -Saint-Georges (village) red.
- 5,400 hectolitres of A.O.C. Nuits -Saint-Georges Premier Cru.
- 60 hectolitres of A.O.C. Nuits -Saint-Georges Premier Cru white.

The red wines of Nuits -Saint-Georges are all produced from one
varietal , Pinot Noir
Chardonnay or Pinot Blanc are used for the few whites. |
The Nuits -Saint-Georges wines nearly
always have intense dark red colour.
The bouquet is powerful and complex : blending cherry, blackcurrant, fur, truffle and,
quite often, spices.
These wines are among the most tannic of the Burgundies. The harmony between tannin and
roundness makes these wines corpulent and solid. |
| Their solid structure assures good keeping quality : In normal years
Nuits -Saint-Georges wines will open up over 5 to 10 years.
In great years, their evolution in the cellar can take up to 25 years before peaking. |

These powerful red wines will be best
appreciated at a temperature of around 15 - 16°C.
Uncorking the bottle one or two hours beforehand is advisable.
For wines of a younger character, pouring the wine into a carafe will give better
aeration, thus improving the olfactory qualities. In this case a good cellar temperature
will be quite sufficient for serving.
The large balloon style glass (often called the Burgundy glass), or a large tulip shaped
glass, filled to only 1/4 to 1/3 capacity will allow the best appreciation of these great
wines. Their flavours will be more "respected" by a fine, thin glass. |

The power and structure of Nuits -Saint-Georges wines allows
association with dishes in red wine sauce, marinated or roast game, strong flavoured red
meat (grilled or roast) and "medium strength" cheeses. In the case of more
tannic wines, they are best accompanied with other game (venison etc.), marinated meat or
meat in sauce. |
Every year the Hospices of Nuits
-Saint-Georges holds a charity wine auction (Enchères des Vins des
Hospices de Nuits -Saint-Georges), at the end of March. This event is
marked by the organisation of an exhibition-tasting of some hundreds of wines from all
over Burgundy.
